Pain Au Chocolat Pudding

A deliciously simple indulgent dessert
Use these classic French pastries to create a simple but indulgent pudding, with golden Pain au Chocolat and rich dark chocolate chips.
Ingredients
- 6 St Pierre Pain au Chocolat
- 10g soft butter
- 2 large eggs
- 175ml whole milk
- 40 ml double cream
- 1/2 tsp vanilla extract
- 30g caster sugar
- 50g dark chocolate chips
Method
- Pre-heat the oven to 180°C / 160°C fan / Gas Mark 4
- Slice the pain au chocolat into even slices, about 2cm thick
- Place them flat in a buttered ovenproof dish
- Break the eggs into a mixing bowl, whisk first before adding the milk, cream, sugar and vanilla extract
- Pour the mixture over the pain au chocolat, and top with chocolate chips
- Leave to stand for 10 minutes, before baking in the oven for 20-25 minutes
- When the top is golden brown, remove and serve with vanilla ice cream
