Leftover Roast Gammon & Cheese Toasties

Take your ham and cheese toasties up a notch this Christmas using your leftover gammon to create these indulgent Roast Gammon & Cheese Toasties. Roasting the gammon in a ginger and orange glaze for extra festive flavour, these toasties will make your festive leftovers magnifique in very little time.
Ingredients
- 4 slices St Pierre Brioche Loaf
- 120g cheddar, grated
- 1 spring onion, thinly sliced
- Few rosemary leaves
- 1 tsp oil
- 1 tsp butter
For the roast gammon
- 1 kg raw gammon joint*
- 1 red onion, cut into quarters
- 2 cloves garlic, unpeeled and smashed
- 3-4 cm piece fresh ginger, peeled and grated
- 1 tbsp butter
- 1 tbsp chopped rosemary leaves
- 1 orange, zested then juiced
- 2 tbsp honey
- 1 orange, sliced
*You can use sliced of thick-cut roast ham for this instead of gammon if you don’t have any leftover gammon
Method
To make the roast gammon:
- Preheat the oven to 190°C / 170°C fan / Gas Mark 5
- To make the roast gammon, first place the gammon in a large pan of cold water so that it is just covered. Bring to a simmer then turn off the heat
- Carefully transfer the gammon to a roasting tin and trim off any excess fat on the top (but leave a thin layer of fat as this helps to stop the meat from drying out). Throw away the cooking water
- Tuck the onion and garlic around the base of the gammon
- Mix together the ginger, butter, chopped rosemary and orange zest and rub all over the top and sides of the gammon
- Cover with foil and seal around the edges of the tray. Roast in the oven for 50 minutes
- Meanwhile mix together the honey and orange juice
- After 50 minutes, remove the foil and drizzle over the honey and orange juice mixture
- Add the sliced of orange on top and return to the oven, uncovered for another half an hour
- Rest for 10 minutes before slicing. Remember to leave some leftovers for toasties the next day!
To make the toasted sandwiches:
- To make the toasted sandwiches, divide half the grated cheese between two slices of brioche then sprinkle over the spring onions and a few rosemary leaves
- Add a few chunky slices of the leftover roast gammon and top with the remaining cheese and slices of brioche
- Heat a non-stick frying pan over medium heat then add the oil and butter
- Add the sandwiches and fry gently for a few minutes until the cheese is starting to melt and the brioche has turned golden brown
- Carefully turn the toasties and cook for another couple of minutes on the other side before serving
