Pimm’s Layer Cake

Nothing quite beats a glass of Pimm's on a warm summer’s day

This Pimm’s Layer Cake combines the classic summer drink with slices of our soft St Pierre Brioche Loaf, layered with Pimm’s-infused cream and sweet strawberries.

Ingredients
  • 3 slices St Pierre Brioche Loaf
  • Large handful raspberries
  • Large handful strawberries, cut into quarters
  • 2-3 tbsp Pimms
  • 125ml double or whipping cream
  • 1 tbsp icing sugar, sifted plus a little for dusting
Method
  1. Place the fruit into a bowl and pour over the Pimm’s. Leave for 15 minutes to soak
  2. Meanwhile, whip the cream together with the sifted icing sugar and set aside
  3. Lightly toast the brioche slices
  4. Drain the fruits but keep the Pimm’s soaking juices
  5. Spread half the cream onto one slice of brioche then top with half of the fruits
  6. Drizzle a little of the juice over the top
  7. Add another slice and top with the rest of the cream, fruit and a little more juice
  8. Add the third slice of brioche and dust with a little icing sugar before serving
