Pimm’s Layer Cake

This Pimm’s Layer Cake combines the classic summer drink with slices of our soft St Pierre Brioche Loaf, layered with Pimm’s-infused cream and sweet strawberries.
Ingredients
- 3 slices St Pierre Brioche Loaf
- Large handful raspberries
- Large handful strawberries, cut into quarters
- 2-3 tbsp Pimms
- 125ml double or whipping cream
- 1 tbsp icing sugar, sifted plus a little for dusting
Method
- Place the fruit into a bowl and pour over the Pimm’s. Leave for 15 minutes to soak
- Meanwhile, whip the cream together with the sifted icing sugar and set aside
- Lightly toast the brioche slices
- Drain the fruits but keep the Pimm’s soaking juices
- Spread half the cream onto one slice of brioche then top with half of the fruits
- Drizzle a little of the juice over the top
- Add another slice and top with the rest of the cream, fruit and a little more juice
- Add the third slice of brioche and dust with a little icing sugar before serving
