Pimm’s Layer Cake
Nothing quite beats a glass of Pimm’s on a warm summer’s day
This Pimm’s Layer Cake combines the classic summer drink with slices of our soft St Pierre Brioche Loaf, layered with Pimm’s-infused cream and sweet strawberries.
Ingredients
3 slices St Pierre Brioche Loaf
Large handful raspberries
Large handful strawberries, cut into quarters
2-3 tbs Pimms
125ml double or whipping cream
1 tbs icing sugar, sifted plus a little for dusting
Method
- Place the fruit into a bowl and pour over the Pimm’s. Leave for 15 minutes to soak
- Meanwhile, whip the cream together with the sifted icing sugar and set aside. Lightly toast the brioche slices
- Drain the fruits but keep the Pimm’s soaking juices. Spread half the cream onto one slice of brioche then top with half of the fruits. Drizzle a little of the juice over the top. Add another slice and top with the rest of the cream, fruit and a little more juice. Add the third slice of brioche and dust with a little icing sugar before serving
