
Pulled Pork Baguettes with Cheese and Spicy Slaw
Bursting with flavours
Smokey BBQ flavours, homemade spiced slaw and melted cheese, all inside a golden St Pierre Brioche Baguettes and served with chunky wedges on the side. Combining the typical BBQ flavours from Texas with the slightly sweet flavour of brioche from France to bring you a sandwich bursting in flavours from around the world.
Ingredients
2 St Pierre Brioche Baguettes
1 pack ready to heat pulled pork with BBQ sauce
Handful grated cheese (we like Emmental)
1 small carrot, peeled
Small piece red cabbage, finely shredded
1 fresh green chilli, finely sliced
Few fresh parsley leaves, chopped
Salt and pepper
½ lemon, juiced
1 tbsp olive oil
Method
- Preheat the oven and cook the pork according to the pack instructions.
- Meanwhile, make the slaw. Add the grated carrot to a bowl with the shredded cabbage, sliced green chilli and chopped parsley. Season with salt and pepper, squeeze over a little lemon juice and drizzle with about a tablespoon of olive oil. Mix well and add a little more lemon juice or seasoning if needed then set aside.
- When the pork is ready, remove and empty into a shallow bowl then shred with two forks. Pile onto the bottom halves of the Brioche Baguettes and top with some grated cheese. Place the open baguettes on a baking tray and pop back in the oven for a couple of minutes to melt the cheese.
- Place the pulled pork baguettes onto a board and add a generous spoonful of slaw. Serve with some potato wedges.
