Ingredients
  • 2 St Pierre Spicy Chilli Brioche Burger Buns
  • 2 large slices of Halloumi cheese
  • 2 tbsp mayo
  • 4 slices of tomato
  • 20g mixed salad leaves
  • 25g sliced chillis

For the Chicken:

  • 2 boneless, skinless chicken thighs
  • 1 tbsp olive oil
  • 1 tsp lime juice
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper

For the Guacamole:

  • 1 ripe avocado
  • ½ small red onion, finely chopped
  • 1 tsp lime juice
  • ½ tsp smoked paprika
  • ½ tsp cumin powder
  • ¼ tsp salt
Method
  1. Marinate the Chicken – Mix the olive oil, lime juice, smoked paprika, cayenne, garlic powder, salt, and pepper. Coat the chicken and let marinate for 15 minutes (overnight is better).
  2. Grill the Chicken – Heat a grill or a griddle pan over medium-high heat. Cook the chicken for 5-6 minutes per side until charred and cooked through.

  4. Make the Guacamole – Mash the avocado and mix with the red onion, lime juice, smoked paprika, cumin and salt.
  5. Toast the Buns – Lightly toast the brioche buns on the grill for 1 minute.
  6. Assemble the Burger – Spread the mayo on the base of the bun, add the salad leaves, the grilled chicken, halloumi, guacamole, tomato slices, and the sliced chillis. Place the top bun and serve immediately.
