The St Pierre take on a Lobster Roll
This dish is our fabulously French version of a classic American recipe, but what exactly is a lobster roll? Well, it’s pretty simple really – lobster meat is mixed with butter or mayonnaise, lemon juice, salt and black pepper and served on a bread bun, often with potato chips or French fries on the side.
Where does the lobster roll originate?
It’s a dish native to New England and Atlantic Canada – lobster fishing regions where it’s more of an everyday ingredient than a luxury treat. It’s said to have originated in Connecticut, and is often associated with areas like Maine, Eastern Long Island and the Canadian provinces of Nova Scotia and Ontario (here, you might even see them as a summer special on McDonald’s menus!)
How do you make a lobster roll?
Even though it uses a luxury ingredient like lobster, the recipe is actually really simple – just mix the lobster meat with your chosen seasoning and fill your bun! The traditional New England lobster roll recipe uses a hot dog roll, so you could go classic and choose a St Pierre Brioche Hot Dog Roll instead of a burger bun. And where the New Englanders usually serve their lobster cold, we’ve turned up the heat to make it warm – and given the dish a little French decadence with the addition of that silky cream sauce.
The Luxury Lobster Burger Recipe
- 2 St Pierre Brioche Burger Buns
- 200g cooked lobster meat, cut into chunks
- Frisee lettuce or rocket
- 3 spears of baby asparagus
- 100g chilled salted butter, cut into small cubes
- 4 tbsp double cream
- 1 lemon
- 4 tbsp white wine (or vegetable stock)
- 3 tsp mayonnaise
- 1 garlic clove, sliced
- 1 tsp salted butter
- 1 tsp chopped fresh chives
- 1 tsp chopped fresh parsley
- First, make your sauce. Heat the white wine or stock in a small saucepan with the sliced garlic and simmer for about 5 minutes until reduced by half.
- Sieve into a jug, return to the pan and turn the heat to low, then whisk in the butter a few cubes at a time.
- Finally, whisk in the cream and the juice of half the lemon, stir in the chives and pop a lid on to keep warm.
- For the asparagus, use a vegetable peeler to make long ribbons and blanch them in boiling water for 1 minute.
- Melt the remaining butter in a frying pan, then add the lobster meat to heat through. Stir in the chopped parsley.
- Mix the mayonnaise with the zest of half the lemon, spread over the base of the brioche bun and add the frisee or rocket.
- Pile on the warm, buttery lobster, top with the ribbons of asparagus, pour over the warm sauce and pop on the lid of your bun.
- Serve with a lemon wedge and extra leaves on the side – and eat avec respect.
