Christmas Turkey, Brie & Cranberry Brioche Toasties

Keep things festive during the Christmas period with these leftover turkey, brie and cranberry toasties – the perfect winter warmers made with our Sliced Brioche Loaf.
Ingredients
- 4 slices St Pierre Brioche Loaf
- 2 tsp butter
- 2 tsp vegetable oil
- Fresh sage leaves (optional)
- Leftover turkey, shredded or sliced
- 125g brie, sliced
- 4 tsp cranberry sauce, plus extra to serve
- Few fresh rosemary leaves, chopped
Method
- Heat 1 tsp butter and 1 tsp oil in a large non-stick frying pan over a medium heat
- Add the sage leaves and sizzle for a minute until crispy
- Carefully remove from the pan and set aside
- Make two sandwiches by layering the turkey, brie and cranberry sauce on 2 of the slices of bread
- Add the chopped rosemary and top with the other 2 slices
- Add the rest of the butter and oil to the frying pan and fry the sandwiches gently for a few minutes on each side until the bread is golden and the cheese is melting
- Sprinkle over the crispy sage leaves and serve
