Ingredients
  • 4 slices St Pierre Croissant Loaf
  • 100g Gruyère cheese, grated
  • 1–2 tsp mustard
  • 2 eggs
  • 4 slices ham
  • 4 tbsp béchamel sauce
  • Butter, for cooking
Method
  1. Spread a light layer of mustard over one side of each slice of St Pierre Croissant Loaf.
  2. Top two slices with ham, grated Gruyère and 1 tbsp béchamel sauce each. Place the remaining slices on top to form two sandwiches.
  3. Heat a little butter in a frying pan over a medium heat. Cook the sandwiches for 3–4 minutes on each side until golden and crisp.
  4. Spoon the remaining béchamel sauce over the top of each sandwich and sprinkle with the remaining Gruyère. Place under a hot grill until bubbling and lightly golden.
  5. In a separate frying pan, fry the eggs to your liking.
  6. Top each croque with a fried egg and serve warm.
