Barbecue brioche to elevate your grilling game
We’ve all had a basic burger or standard sausage at a BBQ, so this summer, why not mix it up and try something with a little je ne sais quoi? A Cumin and Aubergine Lamb Burger is a great Mediterranean alternative to your usual beef – or you could swap the sausage for chargrilled pieces of marinaded chicken to make a Chicken Kebab Hot Dog instead. It’s not all about the meat either: seared tuna, chunky slices of aubergine and spiced cauliflower steaks all make great alternative burgers.

Once you’ve decided on your magnifique menu, it’s time to start planning and organising so you can make your occasion special. One of the best barbecue tips for beginners is to prep as much as you can so there’s less to do on the day – so here’s our checklist of the most helpful things to do in advance:
- Check your BBQ: it could have been a year since your BBQ last had an outing, so get it out of hibernation, make sure it’s all working and that you’ve got all the utensils you need.

Always remember to wash your hands and utensils after they’ve touched raw meat – and make sure it’s cooked through before serving (a food thermometer is really helpful for this.) And we know it sounds obvious, but be careful when cooking over flames – keep the kids away from the barbecue if you can.
BBQ tips to help you grill to perfection
So, you’ve laid the table, set-up a self-serve brioche station and your friends and family have all arrived – now, it’s time to fire up the grill. When you’re cooking over flame, it’s easy to char the outside of your meat while the middle somehow seems to stay raw – so here’s a few barbecue grilling tips for delicious (and safe) food!
- Fire up early: start heating your coals well in advance so it reaches the ideal cooking temperature gradually – your guests will get hangry if they’re kept waiting too long!
- Choose the right charcoal: lump charcoal is a fast option with an approximate burn time of an hour, making it a great all-rounder to cook all sorts of different meats quickly and evenly. Or, you can choose a briquette for a longer burn time of up to 3 hours – great if you want to grill a larger cut or joint.
- Only flip your burgers once: it’s tempting to keep turning, but to get the best results, you should only flip your burgers once. You’ll know it’s ready to flip when you can lift the edge of the burger without it sticking. And another barbecue burger tip? St Pierre buns are best served warm, so put them on the grill for a couple of minutes to toast.
