Honey Roast Sprouts and Goats Cheese on Toast

Brioche Loaf With Honey Roasted Sprouts & Goat Cheese

Ingredients

  • 6 slices St Pierre Brioche Loaf
  • 250g sprouts, halved
  • 1-2 tbsp olive oil
  • Sea salt and black pepper
  • 1 tbsp honey, plus extra to drizzle
  • 2 tbsp roughly chopped hazelnuts
  • 150-200g Goats cheese log
  • ½ pomegranate (or small pot of seeds)

Steps

  1. Preheat the oven to 170°C fan/190°C conventional/gas 5. Heat a baking tray then add a little olive oil
  2. Cut the sprouts in half through the root and place onto the hot tray. Drizzle over a little more oil and season with salt and pepper
  3. Roast in the oven for 15-20 minutes until starting to turn golden round the edges and soften a little
  4. Drizzle over a tablespoon of honey and scatter over the hazelnuts then return to the oven for another 5-10 minutes until cooked to your liking
  5. Toast the brioche slices lightly on one side then turn over and add the sliced goats cheese
  6. Pop under the grill for a couple of minutes until starting to melt
  7. Top with the roasted sprouts and finish with some pomegranate seeds and a drizzle of honey
